Warm Up With Some Apple Cobbler

What do you do after visiting an orchard and picking 10 lbs. of fresh apples right from the tree? You make some yummy desserts! The moment we got home from our apple picking outing I started searching for recipes. I initially wanted to make an apple crisp, but my husband turned up his nose at the sound of it. Just FYI, Josh’s favorite dessert is apple pie. His favorite apple pie is, of course, made by his grandmother. So he wanted me to make a pie, but I (and my pride) quickly let him know that I would be doing no such thing. All I could imagine was him eating my apple pie and saying “This is ok, but Grammy’s is better.” I didn’t want to hear him utter those words so I knew that I would not even attempt to make a pie; so apple cobbler it was!

 

Apple Cobbler

Ingredients

Pie Filling
5 cups tart apples, peeled and sliced
3/4 cup of sugar
2 tablespoons flour
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon salt
1 teaspoon vanilla
1/4 cup of water
1 tablespoon butter softened

Topping
1/2 cup flour, sifted
1/2 cup sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
2 tablespoons butter, softened
1 egg slightly beaten

Directions

In a medium bowl, combine sliced apples, 3/4 cup sugar, 2 tablespoons flour, cinnamon, nutmeg salt, vanilla and water.

Preheat oven to 375 degrees. Turn the mixture into a lightly buttered 9 inch square pan. Dot apples with 1 tablespoon butter.

Now make the topping. Combine all topping ingredients in a small bowl. Beat with a spoon until batter is smooth. Drop the batter in 9 equal portions, starting with the corners first. Batter will spread during baking.

 

Bake 35 to 40 minutes at 375 degrees or until apples are tender and crust is a golden brown. Serve warm with cream or ice cream.
