This dish is simple and simply delicious! It was a great alternative for the spaghetti that I have anywhere from once a week to every other week. If you are looking for a slightly healthy meal (carbs can be healthy, right!?) please, do yourself a favor and whip this up for your next meal!
2 Tbsp Olive Oil
1 Tbsp Butter
4 Cloves of Garlic
1/2 tsp Salt
1/2 tsp Pepper
1/2 lb. shrimp (deveined–get some fresh at your local grocer’s meat dept.)
Fettuccine (I used about 3/4 of the box)
1 Can Diced Tomatoes
Handful of Fresh Parsley
Thoroughly rinse shrimp and set aside.
In a saucepan, bring water to a boil. Add fettuccine. Once cooked, drain and set aside.
In a skillet on medium heat, combine butter, olive oil and add salt and pepper. Once the butter is melted, add minced garlic and shrimp. Cook for 5 minutes. Remove the shrimp from the skillet then set aside.
In the same skillet add your can of tomatoes (including the juice) and bring to a simmer. Once the sauce thickens (it will only be slightly) add the cooked fettuccine and shrimp.
Combine all the ingredients. Chop the fresh parsley and sprinkle on top. SERVES 4.
