Summer at my house means chalk drawings on the sidewalk, water wars out back, sitting on the deck and firing up the grill. Grilling for me means simplified dinners because my husband is typically the one doing the cooking. All I have to do is prep all the food and dinner is ready within 30 minutes. Simplified duties and good food makes just about any day a good day. It also allows me to kick back and spend more time with my family.
I recently experimented with some spices and came up with some grilled kabobs that were full of flavor. The sweet and spicy combo made me wish I had made about 10 more kabobs.
Our local Giant Eagle is right around the corner, and everything I needed to prepare for grilling and finish my meal were all there, including veggies to add to the kabobs, drinks and dessert.
Sweet and Spicy Kabobs Recipe
You’re probably wondering what I used and did to make the kabobs, so let me share this simple recipe:
1 pack Giant Eagle boneless, skinless chicken thighs
1 pound Natures’s Basket uncooked, deveined shrimp
sliced vegetables (zucchini, red onion, pearl onion portobello mushroom, green and red pepper, and yellow squash)
For the Spicy Shrimp
2 tablespoons honey
1/2 teaspoon crushed red pepper
1 teaspoon Old Bay
For the Sweet Chicken
1/2 cup soy sauce
1/2 cup balsamic vinegar
1/4 cup light brown sugar
1 tsp black pepper
1/4 tsp garlic powder
What to Do
If you’re using bamboo or wooden skewers, allow them to soak in a pan of water before adding them to the grill. Cut chicken into chunks and place in a bowl. Put shrimp in a bowl as well. Marinate the meat for 30 minutes (longer if you have the time).
Add meat and sliced veggies to the skewers, brush lightly with olive oil.
Place them on the grill for seven minutes, making sure to periodically turn them. Once they are fully cooked, allow them to rest for just a couple minutes and enjoy while hot! These kabobs will be delicious and full of flavor; They easily complete any grilled meal.
